Spicy Shrimp and Pasta
Ingredients
2 Lbs large shrimp - peeled and deveined
4 Tbs olive Oil
Sauce
2 Med onions - diced
6 Tbs butter
8 cloves garlic – minced
2 ½ cup chicken broth
½ cup tomato paste
29 oz can fire roasted tomatoes
2 Tsp soy sauce
4 Tsp hot sauce
2 Tsp dried oregano
1 Tsp dried basil
2 Tsp mustard powder
2 Tsp red pepper flakes
½ Tsp pepper
Directions
Heat large skillet to med high
Add olive oil
Once hot
Add shrimp
Cook 2 minutes per side
Once done remove from skillet
Set to the side
Add onions and butter
Cook for about 10 minutes
Add 1 ½ cup broth and garlic
Cook for 5-10 minutes
Till reduced by half
Add remaining broth and tomato paste
Stir to combine
Add tomatoes, soy sauce, hot sauce
Stir to combine
Add seasoning
Stir to combine
Then reduce to a simmer
let simmer for 10-15 minutes
Add shrimp to skillet
Stir to combine
Cook for additional 2-3 minutes
Serve over pasta
Top with parmesan cheese
