Chicken and Rice with gravy
INGREDIENTS
2 chicken breasts cut in half
Cajun Seasoning
! tbs oil
2 tbs butter
1 diced onion
1 diced bell pepper
1 rib celery
8 minced garlic cloves
6 cup water
2 tsp chicken bouillon
1 can cream of chicken soup
1 cup rice rinsed
DIRECTIONS
Slice chicken breast in half lengthwise
Season on all sides with Cajun seasoning
Heat a large pan on med high
Add 1 tbs oil and butter
Once hot sear the chicken for 4-5 minutes per side
Shread with 2 forks and set to the side
Add remaining butter
Add your onion, bell pepper and celery
Sauté for 5 minutes till soft
Add your garlic and cook for another minute
Add your bouillon and water
Stir well, scraping up any bits from the bottom of the pan
Add your cream of chicken soup
Mix to fully combine
Add your rinsed rise
Cover and simmer for 12-15 minutes stirring halfway through
Once rice is ready add your chicken
Adjust season as needed
Serve with vegetables
