Chicken and Dumplings
INGREDIENTS
1 whole chicken
1 Can cream of chicken soup
2-3 cans biscuits
Flour
Kosher Salt
Ground Pepper
2 Chicken bouillon cubes
Whole pepper corns
DIRECTIONS
Rinse your chicken and remove giblets
Add chicken to a stock pot
Add enough water to cover chicken about 1 inch
Add salt, pepper corns and chicken bouillon
Bring to a boil
Reduce to low and cover
Cook for 90 minutes or till done
Remove chicken and set on platter to cool
Once chicken is cool shred and place in a bowl
Discard the skin
Strain your chicken broth
Return to your pot
Take your biscuits and coat in flour
Using a roller, roll out to about ¼ in thickness
Cut into pieces
Place cut biscuits into a bowl
Bring your broth up to a low boil about a medium heat
Add in your cream of chicken
Slowly add your dumplings to your broth
Gently stir to keep them from sticking together
Once all your dumplings are added
Cook for till dumplings are no longer puffed up about 30 minutes
Add salt and pepper as needed
Add your chicken
Let cook another 30 minutes
Note:
If your broth is too thin use cornstarch to thicken
