Nacho Cheese Sauce
INGREDIENTS
4 tbs butter
4 tbs flour
2 cups milk
16 oz block cheddar cheese
6 tbs pickled jalapeno juice
Tortilla chips
Toppings
Onion - diced
Tomatoes - diced
Pickled Jalapeno
Sour Cream
DIRECTIONS
Shred your cheese and set to the side
In a large saucepan over medium heat, melt the butter
Stir in the flour and mix well
Cook for 2-3 minutes, stirring constantly to form a roux
Slowly stir in the milk and bring it to a gentle simmer
Watch for bubbles forming around the edges
Reduce the heat to low
Add the shredded cheese about 1 cup at a time, stirring continuously until fully melted and smooth
Stir in the pickled jalapeño juice for a tangy kick.
Keep stirring until the sauce is creamy and well combined
Keep stirring until cheese sauce is nice and smooth
Place tortilla chips in a bowl and pour the hot cheese sauce over the top. Top with cheese sauce
Add any extra toppings you like — sliced jalapeños, diced tomatoes, sour cream
