Short Rib Chili
INGREDIENTS
1.5 lbs boneless beef short ribs
1 can Kidney beans (rinsed)
1 can Black beans (rinsed)
16 oz crushed tomatoes
1 sm can chipotle peppers in Adobo (chopped)
¼ cup cilantro (chopped)
½ red bell pepper (diced)
1 onion diced
2 jalapenos diced
2-3 tbs tomato paste
2 tbs Worcestershire sauce
6 cups beef broth
1 tbs garlic
3 tbs brown sugar
1 tsp chili powder
1 tsp cumin
1 tsp Cajun seasoning
1 tsp smoked paprika
1 tsp Mexican seasoning
All Purpose Seasoning
DIRECTIONS
Season short ribs with kosher salt on all sides
Heat Dutch over med high heat
Sear short ribs on all sides and then set to the side
Add your onion, bell pepper and jalapeno
Cook till tender about 5 minutes
Add garlic and cook for another minutes
Add tomato paste and chipotle peppers
Cook for another 2-3 minutes
Add your beef broth to deglaze the pot
Add in your remaining ingredients:
Worcestershire, brown sugar, chili powder, cumin Cajun seasoning
paprika, Mexican seasoning and crushed tomatoes
Add your beef ribs to the pot
Bring to a boil then reduce to low
Cover and let simmer for 2-3 hours or until ribs are tender
Once ribs are tender remove from the pot
Use 2 forks to shred the meat
Return shredded meat to the po
Stir in the chopped cilantro and beans and adjust seasoning as needed
Let cook for another 15 minutes for beans to heat up
