Sausage Jambalaya
Ingredients
2 Med Onions - diced
½ Cup of Celery - diced
½ Cup of Bell Pepper - diced
3 Garlic cloves - minced
½ Stick of Butter
2 Lbs. Sausage – sliced
1 Can diced Tomatoes
1 Can Rotel
1 ¾ cups uncooked rice
2 cups of water or stock
1 Tbs Creole Seasoning
Salt & Pepper
1/2 tsp Cayenne Pepper - Optional
Directions
Heat a large pot on Med High heat
Cook sausage until brown
Remove sausage and set to the side
Melt Butter and add vegetables
Cook till celery is transparent
Add sausage and remaining ingredients
Taste and add S&P if needed
*For extra kick add 1/2 tsp Cayenne Pepper
Bring to a boil
Lower to Simmer
Cover and cook for 25 minutes
