Pork with Rice and Gravy
INGREDIENTS
2 lbs pork (favorite cut)
Cajun seasoning
Garlic powder
Onion powder
Hot sauce
Oil
½ stick of butter
1 onion – diced
1 bell pepper – diced
2 celery stakes – diced
DIRECTIONS
Place your pork fingers in large bowl
Add Cajun Seasoning and hot sauce
Toss to well coat
Heat oil in a Dutch oven on med high
Once hot sear pork on all sides until brown
Remove and set aside
In the same pot add butter and vegetables
Cook until vegetables are tender
Return pork to the pot including drippings
Add enough water to cover the meat
Adjust seasoning if needed
Lower to a simmer
Cover and cook till pork is fork tender about 1 hour
Check occasionally adding water as needed
Adjust seasoning as needed
If you want a thicker gravy add 1-2 tbs of flour
Serve with rice and pea’s
