Pomodoro – Tomato Sauce

INGREDIENTS

1 sm red onion - halved

1 carrot – peeled and halved

6 large garlic cloves – peeled

28 oz can whole tomatoes – hand crushed

Olive oil

Basil fresh

Salt

 

DIRECTIONS

 Add your whole tomatoes to a bowl

Using your hand crush them down to as small a pieces as possible

 

Heat medium saucepan on med high heat

Add olive oil enough to cover the bottom

Once you oil is hot add your garlic cloves

Cook till garlic has a light brown color

Once brown add your tomatoes, onion, carrot, basil and olive oil about 2 tablespoons

Simmer for 25-30 minute or till carrots are tender

Taste and add salt as needed

Now remove your onion, carrot and basil

Use an immersion blender to smoothen out the sauce

 

Server over pasta and top with fresh grated parmesan cheese
