Oven Baked Chicken

Baked Chicken (Whole)



Ingredients

1 Whole chicken (4-6 lbs)

1 Lbs small potatoes


Seasoning

1 Tsp salt

½ Tsp ground pepper

1 Tsp p smoked paprika

¼ Tsp cayenne pepper

1 Tsp garlic powder

1 Tsp onion powder

1 Tsp thyme

1 Tsp basil

1 Tsp rosemary

½ Tsp parsley


Directions

Preheat the oven to 375


In a small bowl

Add all seasoning spices

Mix to combine

Store in airtight container for up to 3 months

Enough for 4–5-pound chicken


Clean out the inside of the chicken

Freeze giblets for use if desired


Placed chicken on cutting board

Place chicken breast side down

Using a serrated knife or kitchen shears

Starting at the thigh end

Cut along one side of the backbone

Turn the chicken around

Cut along the other side of the backbone

Backbone is now removed from the chicken

This is known as Spatchcocking


Flip chicken back over with breast side facing up


Press down on the breastbone to flatten the chicken


Now the chicken is ready for seasoning


Place the chicken on foil lined baking pan


Sprinkle with the seasoning blend on both sides


Cook to internal over 165 approx. 1-2 hrs.
