Lone Star Pot Roast

INGREDIENTS

Beef Chuck Roast 3-4 lbs

2 tbs oil

1 can diced tomatoes

1 can chopped green chilies

2 tbs taco seasoning

2 tps beef bouillon

1.5 cup beef broth

3 tbs flour

Salt and Pepper

 

DIRECTIONS

Season roast with salt and pepper on all sides

Heat Dutch Oven over med heat

Add oil

Once oil is hot

Add your roast and sear on all side about 5 minute per side

Once roast is seared

Add all ingredients except the flour and ½ cup broth

Add 1 cup beef broth and stir

Cover and simmer for 2-3 hrs till meat is tender

Remove toast and set to the side

To a small bowl combine broth and flour

Stir into juices

Cook for about 5 minutes on medium until thick and bubbly

Slice your roast and remove any fat

Return to gravy give a stir to coat beef in gravy

 

Serve with rich or mashed potatoes
