Lasagna Soup
INGREDIENTS
1.5 tbs cooking oil
1.5 lbs Italian sausage or Ground Beef
2 sm yellow onions
2 bell pepper
6 cloves garlic
3 tbs tomato paste
15oz can crushed tomatoes
15oz can diced tomatoes
1 tsp salt
½ tsp black pepper
3 tsp sugar
½ tsp red pepper flakes
8 cups chicken broth
12 lasagna noodles
Cheese Topping
1.5 cup cottage cheese
¾ cup shredded mozzarella cheese
½ cup grated parmesan cheese
½ tsp pepper
DIRECTIONS
To a small bowl add your ingredients for your cheese topping
Mix to fully combine
Place your cheese topping in the refrigerator till soup is cooked
Heat large Dutch oven over medium high heat and add oil
Crumble your ground beef or Italian sausage
If using Ground Beef add 2 tbs Italian Seasoning
Once meat is browned add your onion, bell pepper and garlic
Once onions are translucent add remaining ingredients
Bring sauce to a boil
Break your lasagna noodles into 1-2 inch pieces
Add you noodles to the sauce
Give a good stir and then cover and cook for 10-15 minutes
Once noodles are cooked remove from heat
Add your soup to a bowl and top with 1-2 tablespoons of the cheese topping
