Fajita Steak Quesadillas
Ingredients
2 lbs skirt, flank, or sirloin steak
*can also use preseasoned
Fajita Spice Mix
2 tsp chili powder
1 tsp paprika
1 tsp ground Mexican oregano
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
Pinch of cayenne pepper
1 tsp salt
8 large tortillas
4 cups Mexican mix cheese
2 lime – cut into wedges
freshly chopped cilantro for garnish
Guacamole
Pico di Galo
Directions
In a small bowl, mix all the spices and salt for the steak
Cover the steaks with an ample amount of the spice mixture
Place steak into zip top bag
Let marinade for 8-10 hrs
Heat grill to 425
Cook steak for 3-5 minutes each side
Remote when at 165 internal
Once done
Cut against the grain into strips
In a large non-stick pan
Heat on medium
Place a tortilla in the pan
Sprinkle half w/ cheese
Spread beef strips on top of cheese
Sprinkle cheese over the beef
Fold tortilla over and
Fry lightly on both sides
Server with lime wedges, Pico Di Galo, Sour Cream, and Guacamole
