Egg Salad Sandwich
INGREDIENTS
12 eggs
3/4 cup mayo
¼ cup green onions - chopped
1 tsp yellow mustard
¼ tsp paprika
Salt and pepper to taste
DIRECTIONS
Place eggs in large pot
Add water and cover to about 1 inch above eggs
Heat water to a boil
Remove pot from heat and let sit covered for 15 minutes
Remove eggs and place in ice bath
After about 5 minutes peal your eggs
Place your eggs in large bowl
Using a potato masher
Mash your eggs (Do Not over mash them you want chunks for texture)
Stir in Mayo, onions, mustard and paprika
Season with salt and pepper to taste
Spread over bread and serve with side of chips
