Chicken with Mushroom Gravy

Chicken with Mushroom Gravy

INGREDIENTS

6-8 chicken thighs

4 tbs oil

1 small onion diced

1 lb sliced mushrooms

2 cloves garlic minced

2-3 fresh thyme leaves chopped

2 cups chicken broth

2 tbs low sodium Soy Sauce

2 tbs cornstarch

Salt & Pepper to taste

 

DIRECTIONS

Season chicken with salt and pepper

In large skillet heat 2 tbs oil over medium high

Add chicken and cook for 5 minutes per side till brown

Lower heat to a medium and add remaining oil

Add your onions and mushrooms

Cook about 7 minutes till onions are softened

Add your garlic, thyme and 1 tsp of salt and cook for 1-2 minutes

To a small bowl add chicken broth and soy sauce

Whisk to combine

Pour ¾ of your broth mixture to your onions and mushrooms

Scrap the bottom of the skillet to remove the bits

Add your cornstarch to the remaining broth and whisk to combine

Reduce heat to a simmer and add the remaining broth mixture

Whisk until smooth

Add your chicken thighs

Cover and cook 10-15 minute or till chicken has 165 internal temp

 

Serve over rice or mashed potatoes
