Chicken Stew
Ingredients
Pot large enough to hold your stew when done
Roux (approx. 2 large spoons)
Water (approx. 3 qts.)
Celery (2-3 ribs diced) about 1 cup
1 med. onion diced
½ med. bell pepper diced or 1 cup
1 can Rotel
1 can diced tomatoes
1 small can tomato sauce or ½ small can of tomato paste
¼ Tsp garlic powder and
¼ Tsp cayenne to taste
¼ Tsp Pepper
¼ Tsp Salt
Meat (Crawfish, shrimp, or chicken) about 4lbs
Directions
In a pot add water and heat till boiling.
Add roux to water
Us a whisk to stir till completely combined
Cook for about 20 minutes
Add Onions, Bell Peppers and Celery
Cook for about 20 minutes
Add Diced tomatoes, Rotel and Tomato Sauce
Cook for about 20 minutes
Add Seasoning
Taste and adjust as needed
Cook for about 20 minutes
Add your meat
Cook for about 30 minutes
Serve over rice
