Chicken Enchiladas

Chicken Enchiladas


INGREDIENTS

2.5 cups shredded chicken

1 ¼ cup Monterey Jack cheese

1 tsp Adobo seasoning

Mexican seasoning

12 flour tortillas

3.5 tbs butter

3.5 tbs flour

2.5 cup chicken broth

10 oz sour cream

1 4 oz can diced green chiles

1 ¼ cup Monterey Jack cheese

 

 DIRECTIONS

Preheat oven to 350

Add your chicken to foil line baking dish

Coat with your favorite Mexican seasoning

Cook chicken to 165 or no longer pink in the middle

Once chicken is cooked set to the side to cool down

Once cooled shredded chicken and place in a bowl

Add cheese and Adobo seasoning

Mix to combine

 

spray a baking disk with cooking spray

Place chicken mixture in the center of the tortillas

Roll them up then place into the baking dish

 

In medium pot on medium high add your butter

Whisk in your flour and cook for 1-2 minutes

Add your chicken broth and whisk till smooth and cook till al light bubble

Add your sour cream and diced green chiles

Do not let the mixture come to a boil

Remove the sauce from the heat and pour over your enchiladas

Top with Monterey Jack cheese

 

Bake for 25-30 minutes

You can turn on the broiler on high and cook for 1-2 minutes to brown
