Chicken Creole
INGREDIENTS
12 boneless thighs
2 tbs Cajun seasoning
4 tbs oil
2 med onions – diced
2 bell peppers – diced
4 celery ribs - diced
6 garlic cloves - minced
1 6oz can tomato paste
2 14.5 oz diced tomatoes
2 cups chicken broth
2 tbs Worcestershire
1 tbs hot sauce
1 tsp pepper
½ tsp dried thyme
4 bay leaves
DIRECTIONS
Cut chicken into 1-inch pieces and season with Cajun seasoning
Heat oil in large skillet or Dutch oven
Add chicken and cook till brown
Once brown remove and set to the side
Add your onion, bell pepper and celery
Cook till veggies are soft about 5 minutes
Add garlic and cook for 1 minute
Add tomato paste and stir into the veggies
Add diced tomatoes, broth, Worcestershire, hot sauce, pepper, thyme and bay leaves
Simmer for 5 minutes
Return chicken to the pot
Cover and cook for 30 minutes
Stir halfway thru and adjust seasoning with Cajun seasoning as needed
Serve over rice
