Cajun Stuff Chicken

Cajun Stuffed Chicken



Ingredients

4 large chicken breasts About 5-6 oz each

1 tablespoon unsalted butter

1 red and green peppers

1 white onions

2 celery stalks, finely chopped

6 oz andouille sausage Diced into small chunks

2-3 garlic cloves Minced

1/2 cup shredded cheddar cheese

2 teaspoons Cajun Seasoning Adjust to suit your taste


Instructions

Preheat the oven to 400 degrees


Heat a skillet on medium-high heat with olive oil

Add the peppers, onions, celery and sausage

Cook for about 3-5 mins

Add garlic

Cook for another minute

Remove from heat and set to the side


Arrange the chicken breasts on a cutting board

Using a knife, cut a deep pocket lengthwise into each

Do not cut all the way through to the other side


Place stuffing mixture in small blow

Add cheese

Mix to combine


Season the outsides of the breasts with Cajun seasoning


Spoon in the stuffing mixture into the chicken breast

Pressing it firmly into each pocket

You can seal each chicken breast with toothpicks


Add the butter to the same skillet

Once the butter has melted, add the chicken breasts to pan

Sear the chicken for 3 minutes on each


Transfer the foil line baking tray

Place in the preheated oven


Cook the breasts until an internal temp of at least 165°F.

Use a meat thermometer

This can take 20 minutes or more


Remove from the oven and cool before serving
