Cajun Shimp Stew

INGREDIENTS

3 lbs shrimp

1 ½ cup oil

1 ½ cup AP flour

2 cups chopped onion

½ cup chopped bell pepper

12 cups shrimp stock or water

1 tsp kosher salt

½ tsp black pepper

½ - 1 tsp Cajun seasoning – to taste

½ tsp dried thyme

 

DIRECTIONS

Peel and devein shrimp and set in refrigerator till needed

 

Heat oil in large Dutch oven over med high heat

Stir in the flour

Cook your Roux to a peanut butter color

About 10 minutes

Add onion and bell pepper

Cook till softened about 5 minutes

Slowly add your stock or water

Bring mixture to a boil

 

Reduce heat

Cover and simmer for 30 minutes

Add the salt, pepper, thyme and shrimp

Cover and simmer for another 10 minutes

Taste and adjust seasoning as needed

Serve over hot rice
