Cajun Pot Roast in Tomato Gravy



Ingredients

4 tbs olive oil

3-4 lbs beef roast

2 tbs Cajun seasoning

½ cup + 2 tbs flour

2 onion – sliced

1 (28 oz) can diced tomatoes

1 can diced tomatoes and chilies

4 cups beef broth



Directions

Heat oven to 325


Heat oil in large Dutch oven


Season roast with Cajun seasoning

Flip and seasoning again


Place 1/2 cup flour on a large plate

Dredge the roast in flour coating all sides


Place the roast in heated oil

Sear all side until brown – about 3 min per side


Placed onions around the roast

Add diced tomatoes

Add diced tomatoes and chilies

Add 1 cup of broth


placed into the oven covered

cook for 3 hrs or until tender


Remove roast from the pan and set to the side


Whisk remaining flour into pot

Add remaining broth

Whisk until combined


Check flavor of the gravy

Add more Cajun seasoning as needed


Bring to a boil stirring constantly

Cook for about 5-10 minutes


Cut up the roast

Add back to the pot


Cook for another 5-10 minutes


Server with mashed potatoes or rice
