Cajun Meatballs and Stew



Ingredients

¾ cup oil

1 cup flour

3 cups onions chopped

1 ½ cup bell pepper chopped

1 cup celery chopped

3 – 32oz Beef Broth

4 cloves garlic minced

2 lbs ground beef 80/20

2 large eggs

¼ cup milk

1 tbs Worcestershire sauce

½ cup fresh parsley chopped

½ cup plain breadcrumbs

4 tsp Cajun seasoning

¼ cup green onion chopped


Optional:

1 tbs hot sauce

1 pkg brown gravy


Directions


Meatballs

In a large bowl

Add ground beef

Add 1 cup onion **

Add ½ cup bell pepper **

Add ½ cup celery **

Add 2 cloves garlic

Add ¼ cup parsley

Add eggs

Add milk

Add Worcestershire sauce

Add bread crumbs

2 tsp Cajun seasoning

Mix till fully combined

Make your meatballs (I use a 1.5 tbs scoop)

*do now over pack the meatballs

*do not precook

** I run my vegetables through food processor

Roux

Heat Dutch oven over med high heat

Add oil

Slowly add flour

Stir constantly until flour is fully mixed with oil

Cook until you get a chocolate syrup color


Once at the chocolate syrup color

Add 2 cups onion

Add 1 cup bell pepper

½ cup celery

Reduce heat cook till onions are transparent


Add enough beef broth

Add 2 tsp Cajun Seasoning

Bring to a boil and reduce heat to simmer

Simmer for 20-30 minutes


Add meatballs to gravy

DO NOT STIR FOR 20 MINUTES

THIS WILL BREAK UP THE MEATBALLS


Continue cooking till you get the thickness you want


Adjust seasoning

Skim as much fat of the top as you can


Add 2 cloves garlic minced

Add green onion and parsley


Optional:

1 tbs hot sauce

1 pkg brown gravy


Serve over rice or mashed potatoes
