Broccoli and Rice Casserole
INGREDIENTS
6 cups Broccoli Florets
2 cups cooked rice
3 tbs butter
¾ cup onions diced
3 tbs flour
2 cups mile
¼ tsp garlic powder
¼ tsp black pepper
½ tsp mustard powder
½ tsp paprika
3 tbs cream cheese
2 cups shredded cheese
DIRECTIONS
Preheat oven to 350
Heat pot over med-low heat
Add butter
Once butter is heated add onion
Cook till translucent for about 5 minutes
Add flour, garlic powder and pepper
Whisk together and cook for 2-3 minutes
Slowly whisk milk into mixture
Once thick and bubble
Remove from heat
Add mustard, paprika, cream cheese whisking to combine
Slow add in 1 ½ cup of cheese
Once fully melted season with salt and pepper to taste
If using fresh broccoli, you will need to blanch in hot water for 2 minutes
Add broccoli, cheese sauce and rice to large bowl
Mix to combine
Place in a greased casserole dish
Top with remaining cheese
Place in over and cook for 35-45 minutes
Once bubble and cheese is lightly browned
Remove from oven
