Beef Tips and Gravy



Ingredients

4 tbs Olive oil

2 onions – chopped

4 lbs cubed chuck or stew meat

1 32 oz container of beef broth

2 cans Cream of Mushroom soup

2 tbs Worcestershire sauce

2 bay leaves

6 tbs cornstarch

½ cup water

Salt and pepper


Directions

Cut your meat into 1 inch cubes

Place in small bowl

Season with salt and pepper


Heat large pot on med high

Add 1 tbs olive oil

Add meat to pot

Cook in small batches till brown

Remove and set aside


Add remaining oil

Cook onions till soft (5-10 minutes)


Add broth, soup and Worcestershire

Mix to combine

Add meat and bay leaves


Bring to a boil

Reduce to simmer and cover


Cook for 1-2 hrs till beef is fork tender


In small bowl

Mix water and cornstarch

Add to pot a little at a time

Until desired consistency


Taste and season with S&P

Remove bay leaves


Optional:

¼ tsp cayenne

2 tbs kitchen bouquet – to darken


Server with mashed potatoes or noodles
