Beef Roast Chili
INGREDIENTS
3-4 lbs beef roast (or Ground Beef)
2 tbs oil
1 Onion – diced
1 Bell pepper – diced
3-4 cloves garlic – minced
1 28oz diced tomatoes
2 cups beef broth
1 6oz tomato paste
3 tbs chili powder
1 tsp oregano
½ tsp crushed red pepper
1 tsp salt
1 tsp cayenne pepper
1 can Red kidney beans – drained
1 can light Red kidney beans – drained
½ cup sugar optional
DIRECTIONS
Cut your roast into 1-inch pieces
Dice your onion and bell pepper
Mince your garlic
Heat oil in large Dutch over med high heat
Add your roast and cook roast till brown on all sides
Added your vegetables and cook till soft
Add your diced tomatoes, broth, tomato paste and seasoning
Mix to fully combine
Reduce heat to a simmer and cover
Cook till meat is tender for about 2 hours
Add additional broth as needed
Add your beans and then simmer for another 15 minutes
(You can add your sugar at this point if you want a sweater chili)
Serve with cheese, chopped onions or side any topping you like
