Beef Pot Roast
Ingredients
1 Beef Roast
1 lbs. Carrots - sliced
1 lbs. Potatoes - diced
1 Stalk of Celery - sliced
2 Brown Gravy Mix
Beef Broth
Cajun Seasoning
Oil
Directions
Preheat your oven to 300
Chop your potatoes
Slice your carrots about ½ inch thick slices
Chop up your celery into 1-inch pieces
Heat a large Dutch Oven on med high
Add 1-2 tbs oil
Season your roast on all sides with Cajun seasoning
Place roast in Dutch oven
Searing on all sides about 3 mins per side
Add beef broth
Add vegetables
Cover and placed into the oven
Cook for 3-4 hrs. or till fork tender
About halfway through cooking
Check liquid level
Add more broth if needed
Once fork tender
Remove from the oven
Break roast up into chunks
Remove about 1-2 cup of broth to a small bowl
Mix in 2 packages of gravy
Pour into pot
Mix to combine
Add roast back to pot
Let sit for an additional 30 minutes
Serve with mashed potatoes
