Beef Lasagna

Lasagna



Ingredients

2 lbs Italian or pork sausage or ground beef

2 cup chopped onion (2 med)

4 cloves garlic - minced

1 28 oz can dice tomatoes - undrained

2 8-ounce can tomato sauce

2 Tbs dried Italian seasoning

2 Tsp fennel seeds, crushed (optional)

½ Tsp black pepper

12 dried lasagna noodles

2 beaten egg

2 15 oz container ricotta cheese or cottage cheese

½ cup grated Parmesan cheese

12 oz shredded mozzarella cheese

Grated Parmesan cheese (optional)

½ tsp red pepper flakes (optional)



Directions

*Sauce

Heat a large saucepan on med-high

Add sausage, onion, and garlic

Cook until meat is brown

Drain any fat from the pan

Add tomatoes, tomato sauce, Italian seasoning,

fennel seeds and black pepper

Bring to boil

Reduce heat and simmer, covered, for 15 minutes,

stirring occasionally


Fill large pot with water

Add noodles

Soak till noodles are flexible

Drain well; set aside


*Filling

Combine egg, ricotta, and ½ cup Parmesan cheese

Mix to combine

Set aside


*Assembly

Spray a 9 x 13 rectangular baking dish with cooking spray

Spread about ½ - 1 cup of the sauce over the bottom

Place layer of noodles on the sauce

**trimming or overlapping as necessary to fit**

Spread the filling over noodles

Spread meat sauce over filling

Spread mozzarella over meat sauce

Repeat layers


If desired

Sprinkle Parmesan cheese over top of last layer


Bake in a 375-degree oven for 30 to 35 minutes

Let stand for 10 minutes before serving
