Beef Chili
Ingredients
3-4 lb. Beef Roast (or Ground Beef)
2 TBS Oil
1 Med Onion
1 Bell Pepper
2 Cloves Garlic
1 28oz can Whole Tomatoes
1 Cup Beef Stock/Broth
1 6oz can Tomato Paste
3 TBS Chili Powder
1 TSP Oregano
½ TSP Crushed Red Pepper
1 TSP Thyme
1 TSP Salt
1 Can Red Kidney Beans - Drained
1 Can Light Red Kidney Beans - Drained
1 TBS Cayenne Pepper (Optional)
Directions
Cut Roast into 1-inch pieces
Heat Oil in large skillet or Dutch oven
Add Roast, Onions, Bell Pepper, and Garlic to skillet
Cook until roast is evenly browned
Add whole tomatoes (roughly chopped)
Add broth, tomato paste and seasonings
Still till all ingredients are combined
Reduce heat to a simmer
Cover and cook for 1-2 hrs. till meat is tender
Once meat is tender add can beans
Cover and cook for another 30 minutes
Add Cayenne if desired for extra spice
Server with cheese, additional chopped onions, or jalapeno
