Beef Cacciatore

INGREDIENTS

2.5 lbs Chuck Roast

2 tbs olive oil

3 tbs chopped garlic

2 onions - diced

1 bell pepper - diced

1 cup mushrooms - chopped

2 tbs olive oil

2.5 cups beef broth

28 oz crushed tomatoes

2 tbs tomato paste

15 oz diced tomatoes

1 tbs sugar

1 tsp fennel seed

1 tsp Italian seasoning

1 tsp dried thyme

Salt & Pepper to taste

Red pepper flakes - optional


DIRECTIONS

Chop your bell pepper, onions and mushrooms

Mince your garlic

 

Season your roast with salt and pepper on all sides

Heat oil in a Dutch oven over med high

Once oil is hot add your roast and garlic

Sear on all sides about 2-3 minutes

 

Transfer your roast and garlic to a crockpot

Add remaining ingredients

Cover and cook on high till roast is fork tender

 

Server over noodles, rice or mashed potatoes
