Chicken and Onions
Ingredients
4 Yellow Onions
4-5 lbs Chicken (legs & thighs)
1 stick Butter
3 cups of chicken stock
Flour
Garlic powder
Cajun Seasoning
Directions
Heat large pot on med heat
Dice 4 large yellow onions set to the side
Season chicken with Garlic powder and Cajun seasoning
Dust with flour on all sides
Add 1 stick of butter to the pot
Let butter melt and get a light foam
Add chicken to pot
Cook for 5-10 mins
Flip chicken
Cook for 5-10 mins
Remove chicken and set to the side
Add onions to the pot
Cook and stir for about 30 minutes
Add 1 cup of chicken stock
Cook for about 5 minutes
Add chicken back to the pot
Add drippings from the chicken
Add 1 cup chicken stock
Bring to a boil
Reduce heat to a simmer
Cover and cook for 1-2 hrs
Check occasionally and stir chicken
At 1 hr check chicken
Add 1 cup chicken stock
Check occasionally and stir chicken
For thicker gravy
Mix 1 tbs water with 1 tbs corn stretch
Add to pot and simmer another 10-15 mins
Serve with rice and potato salad
