Southern White Beans
INGREDIENTS
1 lbs Great Northern Beans
2 smoked turkey legs
2 tbs vegetable oil
1 sm onion - diced
1 cup celery - diced
1 cup bell pepper - diced
2 cloves garlic - minced
32 oz chicken broth
2 tsp hot sauce
1 bay leaf
1 tsp Cajun seasoning
DIRECTIONS
Place your beans in a small bowl
Remove any rocks or debris
Wash the beans then cover with water about 2 inches above beans
Soak over night
In medium to large stock pot add oil and heat on med high
Once oil is hot add your onion, bell pepper and celery
Cook till soft about 5 minutes
Add garlic and cook for about 1 minute
Add your broth, seasoning and bay leaf
Give a good stir to mix ingredients
Pour off the water from your beans
Add your beans and turkey legs
Add enough water to cover the legs
Bring to a boil then reduce to a simmer
Cook for 2 hour or till beans are soft
Once beans are cooked remove turkey legs an pull meat of the bone
Return meat to the pot
Add salt and pepper to taste
