Southern Fried Catfish
Ingredients
1 Lbs. Catfish
1 TBS Cajun Seasoning
1 TBS Hot Sauce
1 TBS Mustard
2-3 cups Corn Meal
Oil
Directions
In large bowl add the following:
Catfish, Mustard, Hot Sauce, and Seasoning
Mix till fish is completely covered
Placed in airtight container
Refrigerate for 30 minutes
Place Oil in large skillet or deep pot
Heat oil on Med high
In separate container
Add 2-3 cups of corn meal in airtight container
Add several pieces of fish
Shake till fish is evenly covered
Remove covered fish and place to the side
Repeat until all the fish is covered in corn meal
Once oil is heated
Place several pieces of fish in the oil
Cook for 3-5 minutes
*My catfish was fresh caught and were small*
*Larger fillets will take longer to cook*
Once cook
Remove from the oil and place on a wire wrack
Repeat till all your fish is cook
