Smothered Pork Chops
Ingredients
6 – Pork Chops
2 – Med Onions
1 Tbs Oil
½ Stick of Butter
¼ Cup of Flour
32 oz Chicken Stock
1 TBS Cajun Seasoning
Salt & Pepper to Taste
Directions
Dice your Onions and set to the side
Heat a large skillet on Med High
Season both sides of porkchops with Cajun Seasoning
Heat Oil to large skillet on Med High
Sear porkchops about 4 minutes per side
Repeat till all porkchops are seared
Remove from skillet
Add Onions to pan
If needed add some broth during cooking
Cook for about 5 minutes
Add butter
Add ¼ cup of flour and mix
**Yes we are making a Roux**
Cook till light brown color 15-20minutes
**keep mixing you do not want this to burn**
**may need to add more butter if to thick**
Add ½ cup of the chicken stock
Mix till well incorporated
Add ½ cup of the chicken stock
Mix till well incorporated
Add Cajun Seasoning
Cook for about 5-10 minutes
Add the rest of your chicken stock
Add your porkchops
If too thick add some water
Raise heat till comes to a boil
Cover and put on low and cook for 2 hours
Check around 30-45 mins
Add more water or stock if needed
If you want a thicker gravy cook for last 30mins w/o cover
Serve over Rice
