Shrimp Stew
INGREDIENTS
½ cup all-purpose flour
½ cup oil
1 cup diced onion
½ cup diced bell pepper
½ cup diced celery
2 lbs raw shrimp peeled and deveined
1 tbs minced garlic (jarred)
2 cups chicken broth
½ tbs Worcestershire sauce
½ tbs Cajun seasoning
½ tsp salt
½ tsp pepper
3 green onions sliced
DIRECTIONS
Make your roux
Heat a Dutch oven over med low heat
Add oil and flour and whisk together
This will take about 30 minutes
You want a peanut butter color
Take your time as you do not want to burn the roux
Add onion, bell pepper and celery
Stir to combine with the roux
Cook until celery is tender about 10 minutes
Add garlic and shrimp
Stir to combine
Cook covered for 5 minutes
Add broth, Worcestershire, Cajun seasoning, salt and pepper
Stir to combine
Cook uncovered for 5 minutes
If mixture is too thick add more broth about ½-1 cup
Add green onions
Stir to combine
Cook uncovered for another 5 minutes
Serve over rice
