Chicken Enchiladas

Chicken Enchiladas

INGREDIENTS

2 chicken breasts

Mexican Seasoning

2 cans enchilada sauce

2 cups shredded cheese

10 6” corn tortillas

Oil

 

 DIRECTIONS

Place your chicken breast on foil lined baking tray

Drizzly with oil and Mexican seasoning

Rub the oil and seasoning on both sides of the chicken

Place in 375 degree oven for 20-25 minute or till internal of 165

 

Remove chicken once done and place to the side to cool

Once cool shred your chicken into bite size pieces

 

Place chicken in large bowl

Add ¾ cup of enchilada sauce

Add 1 cup shredded cheese

Mix to fully combine

 

Spread a thin layer of enchilada sauce over the bottom of a 9x13” baking dish

 

Lay your tortillas flat

Add ¼- 1/3 cup of the filling

Fold the edges on each tortilla over the center

Place the seam side down into the backing dish

Repeat till all your filled tortillas are in the dish

 

Drizzle the remaining sauce over the enchiladas

Sprinkle the remain cheese over the enchiladas

 

Place on the center rack in your over at 375

Bake for 20-25 minutes

 

 Serve with side of mexican rice or beans
