Shrimp and Rice

Shrimp and Rice



Ingredients

2.5 cups long grain white rice

5 cups chicken broth

2 lbs shrimp – peeled and de-veined

*Let come to room temperature*

8 tbs butter

2 tbs minced garlic


Cajun Seasoning

3 tsp paprika

2 tsp salt

2 tsp garlic powder

1 tsp black pepper

1 tsp onion powder

1 tsp dried oregano

1 tsp cayenne pepper

½ tsp crushed red pepper flakes


Directions


Whisk together all seasonings in small bowl


Melt 4 tbs butter in large skillet

Add 1 tbs Cajun seasoning

Add garlic and rice

Add broth

Mix to combine


Bring to a boil on med high


Reduce and to simmer

Cover and cook for 15 minutes

Stirring occasionally


Coat the shrimp with the remaining Cajun seasoning

Melt 4 tbs butter

Pour over shrimp

Toss to evenly coat the shrimp


Stir shrimp into the rice

Cover and cook for 5-7 minutes

Cook till shrimp are pink and opaque
