Salsa Roja
Ingredients
2 lbs tomatoes chopped
1 sm white onion chopped
2 jalapenos chopped
**use Serrano peppers for more heat
2 cloves garlic chopped
¼ cup chopped cilantro
Juice from 1 lime
2 tbs olive oil
¼ tsp cumin
1-2 tsp tomato base
Salt to taste
Directions
Chop all your vegetables
Added to food processor
Process till smooth
Add oil to large pan
Add salsa it will sear quickly
Add cumin and tomato base
Mix to combine
Reduce heat to simmer
Simmer for 15-20 minutes
Season with salt as needed
Serve hot or refrigerate for about an hour
