Ribs in Red Sauce
INGREDIENTS
2 lbs pork riblets
5 chile Guajillo
2 chile ancho
5 garlic cloves
½ white onion
2 cups water
1 tsp onion powder
1 tsp garlic
1 tsp cumin
1 tsp oregano
1 lbs tomatillos
2 jalapenos
1 cube Consummate
oil
DIRECTIONS
To a pot fill ¾ with water
Add your tomatillos, jalapenos and onion
Boil till done (about 15)
Once done remove and set to the side
Add your guajillo and ancho peppers to the water
Steep till soft
Add veggies to a blender
Add Consummate, garlic and oregano to the blender
Add 1 cup water
Blend until smooth
Cut pork riblets into bite size pieces
Add some oil to a skillet
Add pork cook till nice sear on all sides
Add onion powder, garlic powder and cumin
Cook for about 10 minutes
Add 1 cup water
Let simmer for 20 minutes
Pour Sauce over your pork
Cover and simmer on low for 20 minutes till port is tender
