Refried Beans
Ingredients
2 lbs dry pinto beans
2 large onions – quartered
1 jalapeno - halved
4 tbs oil
6 cloves garlic - minced
2-4 tsp salt
1.5 tsp ground cumin
1 tsp oregano
Directions
Rinse beans
Place beans in large pot
Cover with water and soak over night
Drain beans after soaking overnight
Add water to about 2 inches above beans
add onion and jalapeno to pot
bring beans to a boil
cover and simmer for about 1 hour
stirring occasionally
add more water as needed
once beans are cook
save about 1 cup of bean broth
drain the bean
in large skillet
add oil
add garlic and cook for about 1 minute
add beans, cumin, oregano and ¼ cup bean broth
stir to combine
Using a masher gently stir the bean mixture
continue stirring and mashing till the desired texture
*add additional bean broth as needed
add S&P to taste
top with shredded cheese
