Pork Medallions with Onion Gravy
INGREDIENTS
2 lbs pork tenderloin
2 tbs olive oil
2 tbs butter
2 large onions thinly sliced
4 cloves garlic minced
2 tbs AP flour
2 cups beef broth
2 tsp Worcestershire Sauce
1 tsp dried thyme
Salt and Pepper
DIRECTIONS
Cut your tenderloin into 1 inch thick medallions
Season with salt and pepper on both sides
Heat olive oil in large Dutch oven on med-high heat
Cook medallions 3-4 minutes per side until brown
Once done remove and set to the side
Add butter to Dutch oven
Once melted add your onions and cook till soft about 8-10 minutes
Add garlic and cook for about 1 minute
Add flour and mix then cook for 1-2 minute stirring consistently
Slowly add your beef broth
Stirring continuously to avoid forming lumps
Add Worcestershire and thyme
Season with salt and pepper to taste
Cook for 2-3 minutes for sauce to thicken
Return pork medallions to the pot
Coating them in the onion gravy
Cook till pork has internal of 145
Server over mashed potatoes, noodles or rice
