Louisiana Style Red Beans

INGREDIENTS

1 lb red beans

1 pkg Andouille sausage

1 smoked turkey leg

2 tbs butter

1 large onion - diced

2 ribs celery - diced

2 bell pepper - diced

8 cloves garlic - minced

32 oz chicken broth

4 bay leaves

 

Seasoning

2 tsp oregano

3 tbs flour

½ tsp thyme

1 tsp paprika

1 tsp cayenne

1 tsp pepper

1 tsp onion powder

1 tsp garlic powder

 

DIRECTIONS

Add your beans to a bowl and cover with water and soak overnight

Slice your sausage

Add sliced sausage to large pot

Cook till browned on all sides then remove and set to the side

Add butter, onion, bell pepper and celery

Cook till soft about 5 minutes

Add your flour and mix then cook for 2-3 minutes

Add all seasoning except bay leaf

Mix to combine

Add your beans, sausage, broth and bay leaves

Mix to combine

Add your turkey leg

Add more water/broth to cover the turkey leg

Reduce heat to low, cover and cook for 2 hrs or till beans are tender

If liquid get to thick, thin out with water or more broth

Taste and adjust seasoning as needed

 

Serve with rich
