Lemon Squares

Ingredients

*Dough

2 Sticks Butter

½ cup Sugar

2 cups flour

1/8 tsp salt

Non-Stick spray

*Lemon Filling

6 eggs – room temperature

3 cups sugar

1 cup lemon juice

2 lemons zested

1 cup flour

Powdered sugar

Directions

Preheat Oven to 350

In a mixer add room temperature butter

Add sugar

Mix till smooth and creamy

Add flour

Mix till combined

Sprinkle flour on surface

Place dough on surface

Knead the dough into a ball

Coat inside of baking dish with non-stick spray

Place dough into dish and spread to the edges

Place into refrigerator for 30 minutes

Bake for 15-20 minutes

Set to the side and let cool

Place 6 eggs in s bowl

Add lemon juice, zest, sugar

Mix till combined

Add flour

Mix to combine

Pour mixture over cooked dough

Bake for 40-45 minutes

Once done

Remove from oven

Let cool down completely (1-2 hrs.)

Sprinkle w/ powdered sugar

Slice and server
