Jerk Chicken
INGREDIENTS
10 bone in chicken pieces (legs & Thighs)
6 green onions
4 garlic cloves
2 habaneros/scotch bonnet peppers
1 ½ in piece ginger
1/3 cup lime juice
¼ cup soy sauce
1 ½ tbs brown sugar
1 tbs fresh thyme
1 tsp black pepper
1 tsp ground all spice
½ tsp cinnamon
½ tsp ground nutmeg
DIRECTIONS
Place chicken pieces in large zip top bag
Add remaining ingredients to a food processor
Pulse several times to chop (it should be somewhat course)
Pour mixture over chicken in zip top bag
Press out excess air
Rub the marinade over the chicken
Set in the refrigerator for 3-24 hours
Preheat over to 375
Using a foil lined baking sheet spray with cooking spray
Remove chicken from marinade
Arrange on baking sheet with space between pieces
Bake for 45-50 minutes till internal of 165
Then 3 minutes on broil
