Green Chili – Chile Verde

INGREDIENTS

4 lbs pork butt – cubed

¼ cup oil

2 large onions – chopped

4 cloves garlic

2 hatch peppers or anaheim’s – chopped

2 Poblano peppers – chopped

2 jalapenos’ seeded and diced

1 lb tomatillos – peeled, cleaned and chopped

2 bay leaves

1 tbs cumin

1 tbs coriander

1 tbs oregano

2 tbs salt

1 bunch of cilantro

3 tbs masa (corn flour)

8 cups water or chicken stock

 

 DIRECTIONS

Prepare you vegetables and set to the side

Heat oil in large pot over med high

Once oil is hot add your pork and salt

Brown on all sides

Remove and set to the side

 

Add onions, cumin, coriander and oregano

Sauté for 3-5 minutes

Add garlic and peppers

Sauté for 3-5 minutes

Add tomatillos, bay leaves and cilantro

Toss the pork in the masa and add to the pot

Add water/chicken stock

Bring to a boil

Then reduce to simmer

Cover and simmer for 2-3 hrs stirring occasionally till pork isa tender
