Eye of Round

Eye of Round



Ingredients

3-4 lbs Eye of Round

2 32 oz Containers Beef Broth

1 Med Red Onion

2-3 Tbs of Oil

2-3 packages of Brown Gravy Mix

Salt & Pepper

Cayenne pepper



Directions

Heat Oven to its highest temp (Elec)

Heat Oven to 350 (Gas)


Dice up onion and set to the side

In large Oven safe pot heat oil on med high

Season Roast with Salt & Pepper on all sides

Once oil is hot

Sear roast about 2-minutes per side

Once seared remove from pot and set to the side


Add onion to pot and cook about 5 min till tender

Add Beef broth

Bring to a boil

Add roast to pot

Cover and place in the oven


**Electric Oven

Cook for 1 hour in Oven on high for one hour

Check broth and add more if needed

Turn Oven off

Let cook in oven for 2 hrs.

Remove from oven when internal is 145


**Gas

Let cook in oven for 2-3 hrs.

Check about once and hour to see if more broth is needed

Remove from oven when internal of 145


Remove roast from pot and set to the side

Slice roast into slices

Season broth with more salt & pepper

Add a few pinches of Cayenne pepper

Add brown gravy mix

Add Roast back to the pot

Cook for about 1 hour on low heat

Server w/ rolls, mashed potatoes, or rice
