Drunken Beans/Frijoles Borrachos
Ingredients
1 lbs Pinto beans
½ package bacon
4-5 cloves garlic
1 can diced tomatoes
*2-3 fresh tomatoes
1 onion chopped
1 jalapeno seeded and diced
1 sm can/bottle beer (Mexican)
1 bunch cilantro
Salt and Pepper
Directions
Clean and wash beans
Place in med pot
Cover with water about 2 inch over beans
Add bacon, garlic, onion, jalapeno and tomatoes
Cover and cook over med heat
Check periodically
Stir beans so they do not stick to pot
Add water as needed to cover beans
Once beans are done (about 7 hrs)
Salt and pepper to taste
Add beer
Add handful chopped cilantro
Let simmer for 30 minutes
**Note – to cut down cook time soak overnight
