Crawfish Fricassee

Crawfish Fricassee



Ingredients

2 Lbs crawfish tails

1 ½ stick butter

4 tbs olive oil

1 cup flour

2 cups yellow onions – diced

1 cup carrot – diced

1 cup celery – diced

1 can diced tomatoes - drained

8 oz mushrooms

2 tbs minced garlic

64 oz chicken stock

4 bay leaves

1 tsp dry thyme

Salt and white pepper to taste



Directions

In large saucepan

Heat butter and oil


Once mixture is hot

Whish in flour

Whisking frequently to combine

Cook for 2-5 minutes

Until a blond roux forms


Add vegetables

Mixing to combine

Cook for 5 minutes


Add stock, bay leave and thyme

Mix to combine

Salt and pepper to taste


Bring to boil

Simmer for 20 minutes


Check seasoning

Salt and pepper to taste


Add crawfish

Cook for 5 minutes


Remove bay leaves


Optional

Add 1 tsp Cajun seasoning


Serve over rice
