Crawfish Creole

INGREDIENTS

4 tbs oil

4 tbs flour

2 onion – chopped

2 bell pepper – chopped

4 tsp minced garlic

2 14oz can tomatoes

2 8oz can tomato sauce

1 can Rotel

2 lbs crawfish tails

1 tbs Cajun seasoning

 

 DIRECTIONS

Heat large skillet or Dutch oven over med heat

Add oil and flour to pot

Mix until smooth using large spoon or whisk

Continue stirring until your roux gets a light brown color

Add onion and bell peppers

Cook until tender about 5 minutes

Add garlic and cook for another 1 minute

Add tomatoes, tomato sauce, Rotel and Cajun seasoning

Bring to a boil

Lower heat to simmer and cook for 15 minutes

Adjust seasoning as needed

Add crawfish and cook another 15 minutes

Serve over rice
