Chicken Smothered in Onions
INGREDIENTS
4 onions – sliced
4 lbs chicken thighs
2 tbs oil
1 cup chicken broth
Salt and Pepper
DIRECTIONS
Slice your onions and set to the side
Season chicken with salt and pepper
Heat a large Dutch oven over med high
Add oil to your pot
Once oil is hot
Place chicken skin side down into your pot
Cook till brown about 5 minutes per side
Once chicken is evenly brown remove and set to the side
Add onion to the pot and stir to remove any bits from the bottom
Add your broth
Add chicken back to the pot
Cover and lower to a simmer
Cook till chicken is done or has internal of 165
Serve over hot rice
