Chicken Noodle Casserole
INGREDIENTS
2-3 lbs chicken breasts
1 pkg Egg Noodles
2 cans Cream of Chicken Soup
1 pkg frozen carrots and peas
1 cup chicken broth
1 cup cheese
breadcrumbs
1 tbs hot sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp pepper
Cajun Seasoning
3 tsp paprika
2 tsp salt and garlic powder
1 tsp pepper, cayenne, and onion powder
1.2 tsp red pepper flakes
DIRECTIONS
• Chicken: Preheat your oven to 350°F. Remove skin from breast. Place chicken on foil lined cooking pan. Season breast with Cajun seasoning (ingredients listed), you can also use your favorite Cajun Seasoning. Bake chicken till internal of 165°F. Once cook, place to the side to cool and then shred using a fork.
• Noodles: Cook your noodles per package instructions.
Putting it all together: In a large bowl add your cream of chicken soup, broth, hot sauce, garlic powder, onion powder and pepper. Mix to fully combine. Add cheese, chicken, noodles and carrots and peas. Mix to fully combine. Coat a baking dish with cooking spray, add chicken mixture to the dish. Sprinkle the breadcrumbs on top of the chicken mixture. Bake for 45 minutes till brown and bubbly. Remove from oven and let stand for 5 minutes before serving.
