Chicken Cacciatore

INGREDIENTS

6 Chicken thighs

1 onion – diced

2 sm bell pepper diced

6 garlic cloves minced

1 sm carrot diced

8 oz sliced mushrooms

8-10 sprigs fresh thyme

2 tbs fresh parsley

2 tbs fresh basil

1 tsp dried oregano

1 cup red wine

28 oz crushed tomatoes

2 tbs tomato paste

½ tsp chili flakes

3 tbs oil

Sale & Pepper

 

DIRECTIONS

Heat oil in Dutch oven over med high heat

Remove the skin from your thighs

Season chicken with salt and pepper on all sides

Sear chicken 5-6 minutes per side

Remove and set to the side

Add onion and sauté 5 minutes

Add bell pepper, carrots, mushrooms, garlic and herbs

Sauté for 7-8 minutes

Add wine to deglaze the pot and cook for 5 minutes

Add crushed tomatoes, tomato paste and red chili flakes

Cook for 5 minutes

**If you want a thinner sauce add 1 cup chicken broth

Add chicken back to the pot

Cover and reduce heat to low

Cook for 45 minutes

Alternately you can bake for 1 hr at 375

Serve with noodles
